Currently the instructions for using the snowflake plugin state that we need to provide a SCIM token which expires every 6 months. I would like to automate this. Is anyone aware if there are docs for the API endpoints the snowflake plugin use?

This is not supported. The current API operations around an app's Provisioning settings are limited to the following: Set up an app provisioning connection
You can suggest Feature Enhancement on the Okta Community page by going to the Community→ Ideas tab. High popularity will increase the likelihood of it being picked up by the Product Team and it being implemented.
