Our organization is in the middle of rolling out Okta to all users. We are using SAML authentication and I was able to set up SSO using the provided guide. After this is set up, I am no longer able to access my account from my cell phone using the Gmail app. I have to log into Okta in a private browser session to be able to access my mail from my phone and this is not convenient. Is there a setting that I'm missing that will allow this to work properly?

If you don't find help from the links above you might consider trying Gmail app on a different device or uninstall and reinstall on your phone.
