I'm getting an unsupported error when attempting to use hardware security keys to auth into the Okta Mobile App for iOS. The same keys work accessing from Chrome/Safari browsers on both iOS and macOS

That is correct, the Okta Mobile does not support the security keys as a limitation of the embedded browser. (for clarification for anyone else checking this post - not to be confused with the Okta Verify app)
Moving forward, with the eventual transition of all tenants to the new Okta Identity Engine, Okta Mobile will no longer be supported.
