What are the backup/retention policies for on-cloud configurations/user authorization parameters that we choose to store (including custom attributes)?
Could we roll back/rewind to a previous day/week?

Unfortunately, we don't have this kind of policy, as it would need to be made per server, not only for tenant. This is why we strongly recommend to use a sandbox environment (an oktapreview tenant) for, let's say, risky implementations.
