I have my license mapping set up with License and Basic for Okta group based on this KB: https://support.okta.com/help/s/article/configuring-the-zoom-user-type-licensed-type-attribute-via-provisioning?language=en_US
But how can I add in these licenses as well, aside from Basic and Workplace which I have covered?

These licenses should first be available on Zoom side, once they are there you should be able to import them by doing a refresh app data, for this you can review our doc below:

I don't have a solution for all of your licenses, but here are some of them.
For unassigned, here is an article that describes how to add them.
To assign a user a Zoom Phone, map an extension for them from Okta to Zoom. That will give them the license and assign them an extension. If you want Zoom to assign it, just enter 0 in Okta to map to Zoom and it will assign an extension.
