The "Assign all people in org" seems to be fairly dangerous to easily fat finger and over grant permissions. Is there a way to disable it?

If there isnt a feature flag then you may want to review your okta admin permissions settings to only give access to that feature to people who truly need it. and then for the select few that do use it, be sure to train them or perform validation on user settings when an app is onboarded or updated
