I am trying to export data for a UAR. I need to see all the groups assigned to each employee across a time period (i.e. month, quarter). I am having trouble finding any documentation related to this topic

The Group Membership Report would be the closes thing to what you require.
Please note that there is no explicit time filter for it, but you can export it to CSV and perhaps filter from there.
You can suggest a feature enhancement for this type of report on the Okta Community page by going to the Community→ Ideas tab. Features suggested in our community are reviewed and can be voted and commented on by other members. High popularity will increase the likelihood of it being picked up by the Product Team and it being implemented.
