I was wondering if there was a way to bypass the MFA setup process for new hires while IT setups their computer. Certain applications require us to sign in which triggers the MFA setup process.

You can setup an MFA policy and enrolment rule for MFA to not be required, and this can be set based on group membership. Once everything is setup you would just remove the users from the group so that the policies will no longer apply to these users.
