Does an API to reset User's Behavior Profile exist?
We have a use case for an automation to perform a Behavior Profile reset and via the API but we're having trouble finding an endpoint or documentation for it.

This is not currently supported.
The Users API does not offer this option and the only other API available refers to the Behavior Rules.
You can suggest this as a Feature Enhancement on the Okta Community page by going to the Community→ Ideas tab. Features suggested in our community are reviewed and can be voted and commented on by other members. High popularity will increase the likelihood of it being picked up by the Product Team and it being implemented.
