Can anyone here tell me how to get a list of the Salesforce profiles to which Okta groups are assigned? I'm trying to compare the profiles I have in SF to the profiles that have been assigned in Okta, but I don't know how to get the list from Okta.

I would suggest to check out the group assignment under <app name> → Assignments → <group name> → edit (pencil button)
There is no specific report for your use case. You could also raise this as a feature request on our ideas.okta.com
