I've just today started getting an "There was an unsupported response from server" error when using Okta SSO on macOS Safari after many months of it working fine. This happens for multiple services. Happens both when going direct to the service and when clicking through from the Okta dashboard. It works fine when using Chrome on the same machine.
OS and browser are up-to-date. Restarting the machine and logging out and in to Okta don't resolve the issue.

We don't use AD or even windows so https://help.okta.com/en-us/Content/Topics/Directory/ad-iwa-configure-browsers-mac.htm is not of any help.
This was eventually fixed by installing and configuring Okta Verify for macOS. It seem like the error I was encountering was happening after my organisation had been configured to use Okta Verify for macOS but before our IT systems had installed it on my laptop.
