Since support@okta.com can no longer be used, and I am/was the sole admin for our domain, and I had to remote wipe my phone a couple weeks ago - and can no longer MFA when trying to access the Admin console, does anyone know a way to ring up support so that somebody can remove my MFA and allow me to reset it?

You can also contact your Okta Sales representative.
She or he can open a ticket to the support, to request assistance to reset your MFA.
Support may not be able to reset your factor directly by phone, for security reason.
By any change, you don't have a valid API token key in your Postman with Super Admin right ?
