Update application username on "Create and update"

I've tried the directions outlined here: support.okta.com/help/s/question/0D51Y0000AOdGyzSQF/updating-app-usernames-when-changing-email-address-for-a-user?language=en_US

 

However, the Override with mapping option does not exist for my applications. It just says "Username is set by [App name]" and gives no ability to change it.

 

I've also set the Application username format from Email to Custom and used the expression user.email, but that doesn't work either. If I click "Update Now" on the App's Sign On tab it will sync correctly.

 

I need to update each user's login or email address for each app automatically but I'm not able to find a way to accomplish this. Please help.
