Unfortunately, there is no official guide on how to set up the Brightspace application but we have a prebuilt OIN application for Brightspace called Brightspace Community. You can use that SWA application for authenticating to the application.
You can also create a custom SWA application for the same by following the instructions provided in the document: https://help.okta.com/en/prod/Content/Topics/Apps/Apps_App_Integration_Wizard_SWA.htm
