Does anyone have any good documentation on Federated Office 365 for the end-user experience? We unfortunately have been tasked to start this in production and do not have the time to do it Preview first.

If they are on the network and you have IWA enabled (no MFA on network) they won't notice anything.
If off the network/no IWA, they will get the Okta sign in and will need to use their Okta credentials.
