Where can I find the specific settings for the Default Sign On Rule?
We added Okta as the SSO for Github, but do not want my engineers to be required to authenticate with Okta every day for Github.
Or if I create a custom Sign On Rule specific for Github, can I change the frequency that the team has to re-authorize?

If you go to Security -> Authentication -> Sign On you will be able to click on the Default Policy and view the settings. You can create a policy for your GitHub specific users and increase the session length if desired, but Okta does recommend using a setting of 2 hours or less.
In the application's Sign On Policy section you do have the ability to change the frequency of a re-authentication prompt. ([App] -> Sign On -> Sign On Policy) This is used to increase the rate of re-auth. If you do end up increasing the session length overall, you can use this to still force more frequent re-auth for your most sensitive applications.
