I'm trying to use Okta as an IdP with AWS Cognito. I'm having trouble finding useful documentation. Can anyone lend some insight or point me to some documentation? Thanks.

This is Vasi from Okta Support. The AWS Cognito console is not added in Okta as a supported integration so we can't provided you an official documentation for this integration.
In order to better assist I found an official documentation from AWS Cognito on about how to Configure Your Identity Pool for a SAML Provider :
