I would like to use Okta as our LDAP server for in our Jamf instance so that peoples first name, last name and email can be populated when enrolling devices. I have seen some documents online about this being possible and the features it provides but I haven't been able to track down a setup guide of any sort.

Okta has an LDAP service in the cloud they call the "LDAP Interface". It's currently an Early Access (EA) feature, so you must request Okta Support enable it for your Okta org, if it's not already enabled.

Universal Directory is actually a little bit different than the LDAP Interface. UD can map and manage attributes from different directories and apps integrated with Okta. The LDAP Interface just lets you connect to an LDAP service for your Okta org. You can then pull data for users and groups. But it does not allow you to update and map attributes like UD does.
