If you are referring to attributes that you can add and then map this can be done from the profile editor menu and then using the mappings to map these attributes, however if you are referring to the custom attributes that are included in the SAML assertion when you create the custom SAML app then you will need to use the Okta Expression language to convert the attribute into what is required on the other side.
