Our Mac users are prompted to re-authenticate to Outlook on their machine, and are unable to do so while on campus due to being redirected for desktop SSO. We are using Office 365. The fix detailed here: https://support.okta.com/help/s/article/Outlook-is-not-authenticating-successfully-via-Desktop-Single-Sign-On did not work for our environment.
Currently, we just have our Mac users go off-network (typically with a mobile hotspot) to authenticate which allows them to use their password and MFA options. Is there any other workaround to try?

Thank you for contacting Okta Community! If the user is logging into Outlook on-network where IWA is running, Desktop SSO will always kick in. Is the user getting an error while logging into Outlook via Desktop SSO? The resolution discussed in the article https://support.okta.com/help/s/article/Outlook-is-not-authenticating-successfully-via-Desktop-Single-Sign-On should work.
