Where has the option to open an app natively in iOS gone? When I click and hold on a tile I only get username password settings

It really depends on the application that you are holding down on. I've just checked with apps like Salesforce, Box (and I have the native apps installed), and it still behaves as expected. Some apps might only offer username and password options.
