Now that Google has updated their icons, how do I change them on the Okta tiles? They appear to be pulled by Okta directly. We can choose which Google Apps to show on user's dashboards, but I don't see a way to change the icons for the individual apps.

If you are using the official Okta Integrations Network (OIN) Google Workspace app, I would be recommended that you wait for the official app update.
However, if you are looking to update the icons sooner, you can do so from the app settings.

Yes, I can edit the 'App Integration' logo, but no one sees that. I want to edit the individual Google App logos (Mail, Drive, Calendar, etc), which don't appear to have an edit/update option. Below is what I see.
Under the same Edit logo option, you can select the additional applications as well.
