I'd like to learn more about an issue I am having with Okta <> Zendesk. Currently Zendesk is set as:
Application username format: Email
Update application username on: Create and Update
But when I change, for example: John.Doe@email.com to john.doe@email.com under Okta Application Assignment, it removed the user and recreated the new user, instead of "updating" the user via Logs. Why would it deprovision it instead of updating?

This is indeed an odd behaviour, as the username should just be updated.
The Okta Community Questions forum isn't really meant for in-depth troubleshooting as we do not have access to you org logs to understand what is happening there.
I would recommend opening a Support ticket, then continuing the discussion with the assigned Technical Support Engineers. They'll be able to access additional tools and resources to help you get to the bottom of it.
