I know we used to be able to do that, but I wanted to verify and I don't want to break the current SSO integration.
I have a user that wants to access another email mailbox on the same domain. Since I can't add the user again with a different username, I was thinking of adding another instance of Office in Okta and setting up the user with the shared email and immutableID. Will that work or will I break the current integration?

Creating a second office application would require to federate that application, which will brake the current application that is working, so that will not be an option.
You can add an application as a SWA, but since the domain is Federated that will not work. Have you tried using a different SMTP for that user?
