Can anyone advise me how and where to amend the Default Policy to allow me to delete an incorrect Attribute in the User Profile - attempted to delete in the Profile Editor and get the above error message

I'm missing some context here, but of the top of my head, the only place that comes to mind in the context of Default policies and attributes, is the IDP routing rule.
I recommend thoroughly reviewing those before making any changes that might break your user authentication.
