    In Application username, you can set to Custom and set the custom field as user.email

     

    Also, Attribute Statements (optional), you can send user.email

    To add to what was said for clarity, SSO URLs are not configurable to pass additional parameters. 

    You can however, pass additional attributes in the statements as @IanM.34980 (Farmers Insurance Group)​  mentioned.
