What if Okta was unavailable?

Our company has been having internal discussions regarding Okta and what would happen if their services were down. We have many business critical applications configured with SAML that would not be accessible. Would we have to contact the vendors and have them disable SAML if Okta was down for an extended period of time? Is there some kind of backup SAML provider that could be used (not sure that is possible)? Or do you just say it is what it is and we hope Okta doesnt go down for an extended period of time? Really interested to see if this is something other companies have discussed, and what the outcome was. Thanks
