Hey,
I would like to get a filter that I would search for in the System Log in order, to find all of the applications that in their sign-on policy the device trust is used.

You can use "user.authentication.authenticate" and outcome.result eq "SUCCESS" in order to see events where device trust was used, but this will not provide any details about the targeted application.
