I just signed up for an account to test Web Authentication (FIDO2). However it's not listed in my multifactor types, just U2F/FIDO1.

What do I need to do to enable FIDO2?

I would contact our sales team at https://www.okta.com/contact-sales/ and let them know that you're interested in trialing the WebAuthn/FIDO2. I'm not sure if they're able to do this, but this would be the place to go to find out if it's possible.

Just an update, I had to speak with Sales to enable this feature. I hope this helps anyone in the future in my situation.
