I am looking for a way to direct staff to their own SharePoint online team site. I can add the individual SharePoint app but this would only direct them
to our company’s SharePoint main site. I do not want to display the SharePoint link under the Microsoft Office 365 app because we do not want everyone
to start using SharePoint all at once.

Hi Abiodun!
I will recommend disabling the Sharepoint icon from General tab and use Bookmark apps for each site. Disabling the icon won't clear the assignment but only hide the app from being viewed on the dashboard. In order to create the bookmark application, access Applications - Add Application - Search for "bookmark".
