Cause
When the user is assigned to the Office 365 application on Okta, and the assignment does not contain any roles and/or licenses selections, Okta will push the profile towards Office based on the assignment and will override the user's profile in Office 365.

Solution
To avoid unwanted roles/license changes on the Office 365 side for already existing users, make sure to mirror the information on the Office 365 side when they are assigned to the application in Okta. Alternatively, manage licenses and roles of the users just in Okta and do not change them individually on the Office side.
