Solution
All Application names can be changed. Follow the steps or video below.

Login to the Okta Admin Console.

Navigate to the Applications menu > Applications.

Select the App required to rename.

Click on the General tab, then select Edit and rename the Application Label.
NOTE: Renaming the app in the UI does NOT change the app's name contained in the embedded app link/URL.
